Airene, Vinos Ambiz
Fabio Bartolomei grew up in Scotland and studied Finance at University before he traded in the accountancy path for sunny Spain. Starting off as a nomad winemaker it took him 11 years to find the right building for his winery which is based in the Sierra de Gredos mountains, a two hours drive West of Madrid. Fabio's roots to his upbringing are always present though with the Scottish flag hung high in the winery.
Bartolomei produces wines from a handful of vineyards that he looks after and from a small portion of grapes that he buys from local farmers. Everything he produces is made following organic and low intervention principles.

Viticulture & Winemaking Organic uncertified. Grapes get crushed, left in contact with the skin, pressed, then racked from tank to amphoras for a few months and naturally clarified by gravity over the winter months. No added SO2, no nothing.

Tasting Notes A great introduction to orange wine. Apricot, quince, citrus, and tropical aromas all come together to make an uplifting palate.
