Bourgogne Rouge, Domaine Didon
In 2017 Naima and David Didon took over an old plot of 2ha in the Chassey-le-Camp in Côte Chalonnaise. David has worked with a range of vineyards like Etienne de Montille in Volnay and alongside friends Julien Altaber and Dominique Derain. They run their historic site biodynamically, only using their hands or a horse to manage the land. Naima and David have put in a lot of work to restore the land and encourage biodiversity by planting as many trees as possible. The vineyard is considered one of the best in the village and is perched on the Eastern slopes of the region with dense yellow limestone soils.

Viticulture & Winemaking Organic practises. Hand-harvested, spontaneous fermentation in open fermenters on natural yeasts, using whole bunches. Followed by elevage in old oak for 8months. Finished with no added S02.
Grapes Pinot Noir
Region Burgundy, France
Tasting Notes Perfumed aromas of cherries, and delicate red fruits. The tannins are silky smooth, with balanced acidity and a long finish.
