Cerdon, Caveau Patrick Bottex
Cerdon is a traditional méthode ancestral (Pet Nat) production from this particular area in the Bugey AOC. La Cueille is one of a handful high-altitude plots surrounding the medieval town of Poncin. It's here that Patrick and Catherine Bottex and their son Carl, own/tend to their vines on these rocky limestone hillsides. They have a total of 5ha of land that they have been farming since 1991.

Viticulture & Winemaking Sustainable practices. Hand harvests, direct press, followed by natural yeast fermentation in open tank to let the CO2 go. Bottled half way through fermentation which will continue in the bottle for about 2 more months. This Pet Nat is then filtered and corked ready for consumption.

Tasting Notes An off-dry Pet Nat showing wild strawberries and candied rose petals. The sweetness is balanced with pink grapefruit acidity. Perfect as an aperitif and will pair alongside a range of dishes like Thai food, soft cheese or strawberry shortcake.
