Chablis, Yannick Cadiou
Yannick Cadiou is a very experienced man. He’s been at Domaine Laroche, one of the most consistent producers in Chablis, up until very recently. He was their Vineyard manager but arrived in Chablis back in 1984. His family is from the Loire. He now has 2 hectares of vines, so very little, with 2018 being his first vintage. Everything is organically farmed. The wines, just like the man, are modest in appearance: lower alcohol and no cru level vineyards. But once tasted, they are wines full of life, with a mouth-filling texture. Glorious examples of their region, made by someone who cares about the ground they are made on. A very comforting discovery and a great reminder of what made Chablis so popular in the first place.

Viticulture & Winemaking Organic viticulture. The grapes are hand harvested and see native yeast fermentation. The wine is finished with low interventions.
