Viticulture & Winemaking Organic viticulture. Hand-harvested, with ⅓ left whole cluster, ⅓ destemmed and crushed, and ⅓ destemmed and crushed but the stems are included in the primary fermentation. Fermentation in chestnut vat for 5-7 days with daily battonage, but no pumping over. Racked off, and alcoholic and malolactic fermentation continues in chestnut vats where the wine rests for 10 months. No fining, filtration, or added SO2.

Tasting Notes Spice, red berries, floral and an undertone of minerality. A great example of the grape and region.
