Ginger, Mas Theo
Found in the unique Drôme Provençale, in the appellation Grignan-les-Adhemar. Laurent Clapier is the 4th generation of the Clapier family to be involved in wine, and he created Mas Théo in 2005. With a firm belief in sustainability, he's love for the environment and preservation he pursued the vineyards biodynamic certification (Demeter) which he achieved in 2011. This holistic approach means that no chemical's are used on the vines and in the winery he uses limited intervention to produce his bottles. Laurent later on got the chance to use some caves “les caves cathedrals” located in the village of Saint-Restitut, which he often uses to age his wines.

Viticulture & Winemaking Certified biodynamic and organic. Grapes are hand harvested, pressed and followed by skin maceration for 15 days. The fermentation uses native yeasts. The wine is racked off the skins, aged for 6m in fibreglass and finished with limited intervention.

Tasting Notes Full and vibrant skin contact white with notes of yellow plum, apricot, and hazelnut. The wines tannins are balanced with acidity and stone fruit aromas.
