Michika, Esmeralda Garcia
After working alongside some of Spain's top organic winemakers, Esmeralda García decided that it was time to head home and start her own venture. Cultivating with only one variety Verdejo, she manages just under 5ha of land in her home town of Santiuste de San Juan Bautista. The dry climate and sandy soil here is well suited to her organic practices with no pesticides or herbicides being used. Esmeralda also lets the grapes speak for themselves with no chemical additives added in vinification.

Viticulture & Winemaking Organic viticulture. Grapes are hand harvested and go through a Brief maceration. Grapes are fermented with indigenous yeasts in amphora and aged for a year in sherry butts under a flor yeast. Then bottled with little intervention.
