Behind Copenhagen-based Muri range are Murray Patterson and Samantha Hunt, both ex-Empirical Drinks. Combining fermentation techniques (kombucha, kvass, wine...) and expert blending, they produce exciting and complex wine alternatives that recreate the tasting and pairing experience with less than 0.5% alcohol. This is achieve using a combination of scobies, water kefir, sourdough starter, and a specific strain of yeast producing little alcohol during fermentation.Region
